Tango Mango Salsa

I can’t think of a better combination than grilling and tropical fruits and this is the season for both. What a perfect match! This recipe for my Tango Mango Salsa is versatile and very delicious! You can eat this on fish, chicken, shrimp and even pork. It also tastes really good on an omelet. I’ve also noted some variations to the menu (see note below).
Ingredients:
1 mango, diced

1 tomato, diced

1/4 red onion, diced

1/2 jalapeno, seeded and diced

1/4 cup parsley, chopped

1 garlic clove, diced
1-tablespoon extra virgin olive oil

Salt and pepper to taste

Juice of 1 lime

Peel and seed all ingredients. Chop the mango and tomato keeping the pieces uniform in size. Chop the rest of the ingredients and combine all in a bowl and toss well. Refrigerate for at least 15-30 minutes.

Note:
Optional add-ons: Add one, some or all for a party in your mouth!
1 avocado, diced
½ cup pineapple dice
Substitute 1/4-cup cilantro for the parsley
1 small cucumber, diced
1 red bell pepper, seeded and diced
