Mother's Day Breakfast - French Toast Stuffed With Brie and Fig Jam!

Mother's Day is the one day you should sit back and put your feet up and not worry about anything, including calories! I don't know about you, but I cook all year round for the family and so on Mother's Day, they cook for me. I provide the recipes and the family does all of the work... I love it! This is a delicious splurge and an easy enough recipe for even a non-cook!




RECIPE for one 9×13 pan

INGREDIENTS
1 Brie round – rind removed and then sliced
1 jar Fig Jam
1/2 cup melted butter (1 stick)
1 cup packed light brown sugar
1 loaf white bread
4 large eggs
1 1/2 cup whole milk
1 TB vanilla extract
2 TB light brown sugar, mixed with 2 tsp cinnamon
Powdered sugar for sprinkling

DIRECTIONS
1.    Melt the butter in a microwave for 20-second intervals until melted.  Add 1-cup brown sugar and stir until well mixed.

2.   Pour the butter mixture into the bottom of a greased 9×13 pan, spreading mixture evenly.

3.   Beat eggs, milk, and vanilla until mixed and set aside.

4.   Lay a single layer of bread in the pan, cutting pieces to fit if needed.  Spoon 1 cup of egg mixture over bread.  Sprinkle with half of the brown sugar/cinnamon mixture.

5.   Lay slices of Brie next in a single layer and then top with spoonfuls of the fig jam.

6.   Repeat with second layer, ending with a sprinkling of brown sugar/cinnamon mixture.

7.   Cover tightly and chill overnight in fridge.

8.   Bake at 350F for 40-45 minutes, covered for the first 30 minutes, and uncovered after that.

  1. Sprinkle with powdered sugar and ENJOY!!!
