Our Family Zucchini Bread... get the coffee ready!


Growing up I lived in a big old house with a large yard and we would grow our own zucchini. Zucchini bread was always made and ready to eat in our home during the summer months.  Hand grating the zucchini is the original method, which is very time consuming so you could easily use your food processor.




  • 1 1/2 cups grated zucchini
  • 2 cups flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 cup sugar
  • 1/2 light brown sugar
  • 2 eggs
  • 1/2 cup oil
  • 1 tablespoon lemon juice
  • 1 teaspoon almond extract
  • 1/2 cup chopped almonds or walnuts chopped


Preheat oven to 350 degrees. Grease 2 small loaf pans. Stir together all dry ingredients. Combine the wet ingredients. Stir together and blend well, then stir in the zucchini and the nuts. Pile into greased pans. Bake 1 Hour or until center is dry and bounces back.
