Crustless Spinach and Feta Pie


This Crustless Spinach and Feta Pie is a fabulous recipe and makes you look like a gourmet chef! It is easy to make and reheats well. Delicious just as is, or with additional vegetables. You can also make it in muffin tins for a grab and go lunch.



Ingredients:

  • 10 oz frozen creamed spinach, thawed
  • 1/2 cup scallions, chopped
  • 2 tbsp chopped fresh dill
  • 1 clove garlic minced
  • 2 tbsp chopped fresh parsley
  • 1/2 cup (2.5 oz) reduced fat crumbled feta
  • 1/2 cup seasoned breadcrumbs
  • 1 tsp olive oil
  • 2 large eggs, beaten
  • 1/2 tsp salt
  • fresh cracked pepper to taste
  • cooking spray


Directions:

Preheat oven to 350°. Lightly spray a pie dish with cooking spray. Sprinkle the breadcrumbs at the bottom of the pie dish or casserole dish.

Mix spinach, scallions, dill, garlic, parsley, feta cheese, and eggs and pour into  the pie dish or casserole dish. I like to add 1/2 cup parmesan cheese sprinkled on top, but it is optional.

Bake 28 to 33 minutes or until knife comes out clean from the center. Let it stand at least 5 minutes before serving.

NOTE: If baking in a casserole dish - double the recipe for a deep dish pie.
