Ingredients:
1 mango, diced
1 tomato, diced
1/4 red onion, diced
1/2 jalapeno, seeded and diced
1/4 cup parsley, chopped
1 garlic clove, diced
1-tablespoon extra virgin olive oil
Salt and pepper to taste
Juice of 1 lime
Peel and seed all ingredients.
Chop the mango and tomato keeping the pieces uniform in size. Chop the rest of
the ingredients and combine all in a bowl and toss well.
Refrigerate for at least 15-30 minutes.
Note:
Optional add-ons: Add one, some or all for a party in
your mouth!
1 avocado, diced
½ cup pineapple dice
Substitute 1/4-cup cilantro for the parsley
1 small cucumber, diced
1 red bell pepper, seeded and diced
