More on Mother's Day - Mango King Crab Salad

As part of my mother's day gift each man in the house will cook something to add to the menu for tomorrows meal. Mike chose to follow my recipe for Mango King Crab Salad. With some help from me, it turned out great! The recipe follows...


4 King Crab Legs, meat removed and broken into pieces
1/2 Mango, diced
1/2 Red Onion, diced
1/2 Carrot, shredded
3 Scallions, chopped finely
1/2 teaspoon Old Bay Seasoning
1 teaspoon Dried Parsley
1/2 teaspoon Crushed Red Pepper
Salt to taste
Juice of 1 lemon
1/4 cup good olive oil

Combine all of the ingredients except the olive oil. Toss gently, drizzling in the olive oil until just coated. I don't always use the entire 1/4 cup. Marinate in refrigerator overnight.
